MICHELIN Guide Inspectors Recognize Four Restaurants in Chicago

  • The MICHELIN Guide will reveal new culinary gems in Chicago throughout the year
  • Some featured restaurants could be the Bib Gourmands or Stars of tomorrow

GREENVILLE, S.C., Oct. 13, 2021 — The MICHELIN Guide today announced four new additions to MICHELIN Guide Chicago selection. These establishments are highlighted as “New” on guide.michelin.com to help food lovers identify new discoveries prior to the annual announcement of Bib Gourmands and Stars.

"By revealing some of the new additions made by our inspectors throughout the year, we enhance our digital tools to further strengthen the ties that bind us to food lovers," said Gwendal Poullennec, international director of the MICHELIN Guides. “As the restaurant industry continues to face unprecedented challenges and uncertainties, we hope that these regular revelations and updates to the selection throughout the year will provide opportunities to highlight the profession and invite everyone to discover and support the restaurants around them."

Here’s the list of new additions with inspector notes from each restaurant:

Dear Margaret
This is a French-Canadian menu that goes beyond poutine and cheese curds. Comfort and decadence are at the heart of shareable plates such as an heirloom tomato salad starring fromage blanc, pickled shallots and dressed with black garlic-ice wine vinegar.

Specializing in whole hog, snout to tail butchery, this all-day salumeria offers a dazzling selection of charcuterie arranged on wooden boards or layered on soft deli bread. Such craftsmanship is in full view of the dining room, which includes a curing chamber filled with rows of soppressata, finocchiona and Spanish chorizo.

Husband-and-wife, Son Do and Chinh Pham, are the proprietors behind this gem that pays homage to their childhood in Saigon. The menu is modern Vietnamese with a focus on ingredient sourcing. Ergo dishes display exceptional depth, so come hungry to sample the duck salad with banana blossoms; or pho, that national treasure, featuring bone broth, flat rice noodles, Wagyu short rib and aromatics aplenty.

Superkhana International
Indian flavors are mixed and mashed in traditional and unconventional ways, as apparent in naan—a prominent menu fixture—topped with salted jalapeños and mozzarella or reimagined as a calzone stuffed with butter chicken, brushed with ghee, and finished with Maldon salt. It’s not all bread—fiery Kerala crab curry with flaky parotta and a vibrant chana chaat with tamarind and spice are equally impressive.

The new selections will be available on the MICHELIN Guide iOS and Android app. Download the app to explore all the Michelin-rated restaurants across the globe and book the world’s most unique and exciting hotels. App users can also create and share their own restaurant and hotel wish lists.
